Crock Pot Recipe – No Bean Chili

It is crazy to think that Christmas is less than three weeks away. In September I always think that December is so far away, maybe because it is still warm and Christmas trees and lights are not even a thought in my mind. After Halloween comes and goes then reality sets in. The reality that we have less than two months to decorate, buy presents, and have fun times with family and friends. We bought our Christmas tree at Davis Ranch off of Jackson highway. We cut it ourselves or I should say my husband cut it and although buying a fresh tree costs a little more it sure is nice to have a fresh smelling tree. For shopping I do prefer to shop online, but there is nothing like Christmas shopping when Christmas music is playing and the fabulous decorations are all around you. The weather outside can be frightful, but personally I love the crisp morning air and the clear skies at night. I do miss the rain, not just because we need it, but more importantly because there is something magical and calming about it. This is the weather where I do my best crock pot cooking. The recipe I have listed today is a NO BEAN CHILI. I have always made my chili with beans, but my husband says Chili does not have beans in it. I started making this recipe and it is a hit, well not so much for my 10 year old, but he will come around one day. According to the weather app we are supposed to get rain this weekend. Crock Pot Recipe

NO Bean chili

Ingredients                       Directions

1 lb ground beef

1 lb stew meat

2 (29 ounce) cans tomato sauce

1 (15 ounce) can diced tomatoes

1 (15 ounce) can Rotel diced tomatoes

1 (6 ounce ) can tomato paste

1 whole medium onion, diced

1 green pepper, diced

2 teaspoons minced garlic

1/8 teaspoon cayenne pepper

1 ½ teaspoons ground cumin

5 tablespoons chili powder

1 teaspoon white sugar  

2 teaspoons black pepper

1.    In large skillet brown ground beef and stew meat ( I cut stew meat in smaller pieces). Once meat is cooked through, drain and add to crock pot

2.    Add all other ingredients to crock pot and stir to combine

3.    Cover and cook on low for 8 hours or high for 4 hours

4.    Serve with shredded cheese and sour cream.
